OWL Old World Lager
A Note on This Beer
The first time I drank a Czech Pilsner in Prague, it was a revelation. Damn refreshing, damn full of biscuity, grassy flavor -- I couldn’t get enough. After trying one in its homeland, I can’t bring myself to waste my time with anything less authentic.
That is until I tried Matchless Brewing’s Old World Lager. Thank goodness for these West Coast gurus who spare no expense to make this beer as true to Czech brewing specifications as humanly possible:
- Decoction Mashing: This is what really separates Czech-made Pilsners from the rest of the pack. 40% of the malts are removed from the main mash and boiled for maximum flavor enhancement. When they’re returned to the mash, they infuse their slightly sweet, biscuity richness while keeping OWL dry and crisp.
- 100% floor malted Bohemian Pilsner Malts: Floor malting extracts way more flavor from the grain than modern mechanical methods, but takes much longer to complete. The process requires constant attention and hand mixing of the grain, but produces that unique intensity only found in Euro Lagers.
- Only Saaz Hops: The grassy bite of Saaz makes for a knockout aroma and bitter spice finish.
- Real Czech yeast: Matchless has a connection that got them access to actual Prague-bred Pivo Yeast. Can’t get more authentic than this!
Pilsners may be easy to chug back by the stein-full, but creating one with old-school intensity and refreshing flavors takes a lot of effort and shows flaws easily -- hence why most American breweries don’t make one. Matchless nails this Eastern European classic. With one sip of Old World Lager, you’re instantly transported to a Czech beer hall without ever leaving your home.
