Mastering the creation of their own proprietary yeast strains, Funkwerks has racked up awards and legendary status as a brewer of the finest Farmhouse Ales. In their newest spring seasonal Sour, these maestros of terroir pair special Belgian yeast with tangy apricots to create Apricot Provincial.
Using the same GABF gold winning base as their Raspberry Provincial, Funkwerks uses Lacto in a specialized 24-hour warm souring, and then ferments the Ale with citrus forward Belgian wheat yeast. Tart and refreshing with hints of bright lemon, warm wheat and dusty apricots, this Sour Ale is designed for warm Spring weather.
Pouring hazy straw gold with a lacing white head, Apricot Provincial’s aroma brims with the scent of ripe fruit. Flavors of a nectarous apricot parfait and sweet dry hay are sprinkled with lemon zest. Belgian wheat yeast bestows this Sour with its citrus character, dusting in cracked pepper and farmhouse funk. Ending with a pucker, tangy apricot and briny lemon linger on the palate alongside a dry finish.
