About This Beer
The brewers began with Lambics crafted using over 1/3 locally-sourced Pajottenland grain. Then they racked them into ten unique Oloroso, Amontadillo, Palo Cortado, and Pedro Ximénez sherry barrels for a weighted average of 40 months in vinous oak.
Tasting Notes
Each balanced quaff reveals intricate nuances of funk, fruit, and wood which add up to a seriously sensational sip! Tangy touches of lemon zest and hay up front flow into dried apricot nuances. Turned earth, tobacco, and black tea notes ground the gulp, before it all culminates with a vinous, oaky dryness.
