About This Beer
Casey Brewing & Blending and Side Project Brewing fermented this Wild Ale slowly in oak barrels with house yeast cultures from both breweries, allowing it to mature for several months. Next, they aged it on fresh, organic, whole peaches from both teams’ favorite growers before finishing it all with vanilla.
Tasting Notes
The use of multiple yeast cultures makes for extra tart complexity, with brightly juicy peach flavors highlighted by hints of lemon, hay, and turned earth. The silky ‘nilla adds a creamy flourish, while effervescent carbonation leads the way to a dry finish.
