A Note on This Beer
Holy moly, just when I felt I was really getting to know one of USA Today’s best new breweries in America, the brewers pulled out a curveball!
As early tasters on Untappd are already raving, this is a Farmhouse Saison I “could drink all day.” But what really makes The Great Earth Beneath Our Feet such a standout is the tremendous amount of work Elder Pine put into it.
Ready for some cool brew science?
- It all began with a huge portion of spelt malt in the mash, creating a lovely soft, almost fluffy, base.
- Then they fermented it on American Saison yeast and a unique variant of Brettanomyces Bruxellensis (wild yeast) for a dry finish. The cool yeast combo also wove in prominent notes of white wine, pineapple, fresh hay, and citrus zest.
- On top of that, the brewers added big doses of New Zealand Wai-iti Hops in both the whirlpool and the dry hop, coaxing out massively fragrant stone fruit and lemon-lime character.
They bottled it all up in August, and the brew’s been conditioning to bright, tangy complexity ever since!
Get a sip now, and the result is nothing other than exquisite. It’s beautifully smooth and lightly funky amid the fruit and barn notes, concluding bone dry and clean.
While you could impress the pants off of your fellow beer lovers by sharing sips and explaining all its intricacies, nobody’ll blame you if you don’t. You’ve earned the right to savor this one, craft fan.
