About This Beer
This Wild Ale starts as a mixed fermentation version of that legendary Witbier, then diverges on three different paths. Chenin Blanc grape must was added to one portion of the beer while Cabernet Sauvignon grape must went into another. Both were barrel aged for deeper flavor. The third portion was fermented with a classic Belgian yeast strain, aged in oak barrels, and blended into the mix.
Tasting Notes
Look for delicate notes of barnyard funk to ripple over a bright lemony tang. Hints of stone fruit, pear, strawberry, and hay should carry through from start to finish, accentuated by a deep vinous character and whispers of oaky tannins.
