For hundreds of years in the fairy tale city of Bruges, De Halve Maan Brewery has preserved Belgian brewing. Their Tripel is often regarded as the “last authentic Tripel” made in Bruges. And like other Belgian brewing legends, Halve Maan rarely makes limited editions.
When they announced the release of a boldly experimental creation, we knew we had to seize on this rare opportunity.
One Gold medal and thousands of new fans later, Straffe Hendrik Wild Triple is a delicious take on their Tripel fueled with a twist of wild - beloved renegade yeast Brettanomyces.
2015 Hendrik Wild is based on their traditional Tripel recipe: Banana esters, caramel biscuit, and a two-hop punch of Saaz and Styrian Hops provide well-balanced bitterness to a hefty six malt blend. When Halve Maan introduced Brett into this masterpiece, it was like tasting a dream. Eating away the residual sugars, Brett mellows the malts and elevates hop aromas with a bright, citrus acidity.
Let the lemon mist dance by serving Hendrik Wild in a well-chilled chalice. A herb garden atmosphere of coriander follows, inviting you to sip the apricot soaked concoction. Sweet orange and ginger, courtesy of Brett, punctuate crispness and follow with a dusty dry finish.
