When Troy Casey tasted a three-year-old puncheon of Oak Theory, the brewery’s 4.29 UT-rated Wild Ale, he noted that time had made it extra deep and funky. He decided to blend it with another single-puncheon brew — a bright, estery Saison — to create today’s stunner.
