Cideries traditionally avoid making sour cider, fearing it will open a Pandora’s box of off-flavors. But Reverend Nat has the requisite skills to harness the sour-creating Lactobacillus, eliminating imperfections, and giving Sacrilege a brisk tartness usually reserved for the finest Krieks and American Wild Ales. This tart clean, shrub-like sourness provides a sharp three-dimensional freshness to sour cherries.
Sacrilege lights up the glass with an electric purple ruby shade. Aromas of heirloom dessert apples meld with puckering sour cherries and hints of oak. Sipping gives way to a flood of clean and crisp tartness. Dense and intense flavors of deep berry-like bing cherries dance across the palate.
