A Note on This Beer
The crew at San Francisco’s Seven Stills describes today’s Insane in the Yeast Strain IPA as “hazier than a Cypress Hill concert.”
And they ain’t wrong!
They brew this treat with authentic Vermont Yeast — a.k.a., the OG, the Numero Uno, the frikkin’ Master Yoda of juicebomb yeast strains. This is the key ingredient for crafting a beer that’s more pillowy than a Serta Sleep mattress and softer than a baby kitten!
But secretly, I think these guys started taking hits from the bong while sitting around the table, talking about flavors. ‘Cause they loaded up this baby with nearly 8 lbs per barrel of kushy Mosaic Hops and Idaho 7 for evergreen dankness — PLUS a new and hard-to-find Hop blend called The Bruce!
The Bruce is a combo of New Zealand Hops, including Nelson, Motueka, Pacific Jade, and Pacifica, all harvested at different stages. It’s a supergroup of nuggets that come together to form a pool of berry madness.
So, if you’re doing the math at home, you know this all adds up to a sh*t ton of hoppy flavor bathed in full-bodied smoothness. The sweet tangerine and piney dankness of Idaho 7 and Mosaic is bolstered by The Bruce’s waves of juicy peaches and grape-ish blueberries. And with the Vermont Yeast in play, it all floats in a cozy-soft pour that’s thicker than the smoke in Cypress Hill’s tour bus.
You don’t need a brain to know this is a killer juicebomb — or that you better grab your cans mega fast, because Seven Stills is notorious for never brewing the same beer twice. If I were you, I’d totally lose my mind if I missed my chance to score a stash right now.
