About This Beer
The brewers started with a base of local Pilsner malt and heritage raw wheat, boiled it with aged hops, and left it in their coolship overnight for inoculation with wild yeasts and local microfauna. After a lengthy slumber in neutral oak barrels, they added North Carolina-grown golden beets and allowed for a lengthy refermentation.
Tasting Notes
We’re expecting tangy lemon zest notes with hints of pithy orange and nuances of apricot. Subtle earthiness should play beautifully with the beer’s natural, wild funk on the way to a crisp finish.
