Craft brewing is an art form. And, just like any other art, there are some people who believe the “traditional” way is the only right way.
Those people aren’t much fun at parties.
Experimenting with new approaches and methods of brewing is what makes craft beer so awesome! And, it’s what makes brews like DDH Cross Pollination so delicious.
To make this unconventional quencher, Phase Three Brewing — one of Chicago’s trendiest breweries, according to The Chicago Tribune — teamed up with the honey-happy gang at Standard Meadery.
It’s rare that we see a brewery like Phase Three collaborate with Mead makers. Rarer still that the outcome is as artfully tasty as this!
Phase Three brewed and double dry-hopped this 8% ABV DIPA with 100% Citra Hops, and paired them with the floral sweetness of Standard’s orange blossom honey. Each smooth-flowing sip paints the palate in decorative notes of freshly peeled oranges and juicy mango. On the finish, sprightly speckles of honeycomb flavor brighten the scene.
If you ask me, this work of art belongs in the MoMA (Museum of Modern Ales). But, since such a place doesn’t exist yet, the best spot to display some cans of DDH Cross Pollination is front-and-center in your fridge, ready to keep you quenched while you perfect your own works of art, whatever they may be.

Deff smell the DDH but the honey and technique feel like it calms down the hops up front.
Leans a bit sweet, but some solid fruit/floral notes from Citra and the 🍊 🌸 🍯 and a punch trailing hop bittering in the finish.

The honey balances the hops so well
Aroma soft orange, tangerine, honey. Flavor has a good amount of juice from the hops that is accentuated by the wildflower honey. You would think it would get too sweet but it doesn’t. Real good!!
