A Note on This Beer
Coolship Cerise actually tastes like a stroll through an orchard in Maine!
The brewers crafted this ruby-hued brew using a coolship — a long tank with no top that allows native, wild yeast to fall into the wort as it cools. The brewers don’t add any other yeast, so when you drink it, you’re tasting the natural microbes straight from the crisp Maine air.
Then, they aged the brew in oak wine barrels for over two years before adding piles of locally harvested Montmorency and Balaton cherries! After several months of resting on the fruit, it’s finally ready.
When it comes out of those barrels, it’s bright red and tangy-tart with just a hint of wild funk. Bold, sweet, and tart cherry flavors burst from every sip, along with subtle nuances of apricot, pie-spice, and a subtle note of oak.
If you ever get the chance to visit Allagash, by all means do so. Until then, you can get a taste of the cool Maine air and bountiful local cherry orchards in every sip of Coolship Cerise.
