Birthday Month: Barrel Aged Cake & Ice Cream Stout
Wild Leap Brew Co
A Note on This Beer
Do you know what the best kind of birthday party is? The kind where they give YOU a gift for even showing up.
Well, Wild Leap just turned 3 years old this September, and they didn’t just throw one big bash with one little gift for their fans. They turned the whole month into one long celebration and topped it off by brewing an ultra-limited birthday Stout!
The fifth and final release in this exclusive anniversary series is today’s Birthday Month: Barrel Aged Cake & Ice Cream Stout. After unwrapping all its luscious layers of whiskey-laden chocolate cake flavor, I’m really not sure whether I’m celebrating their birthday or my own!
To make this indulgent dessert beer, Wild Leap blended their Vanilla Ice Cream Stout aged in award-winning ASW whiskey barrels and a mouthwatering Cake Stout. Then, they tied an extra ribbon of silky lactose into the 10% ABV brew for even more cakey fluffiness.
Every sip is like a slice of German chocolate cake layered with caramel coffee filling, and all slathered in decadently soft cream cheese frosting. And of course, with a hefty scoop of scotch vanilla ice cream on the side — it is a party after all!
And it’s a party that I don’t ever want to stop! But alas, all good things must eventually come to an end — once the last cans of Barrel Aged Cake & Ice Cream are gone, that’s lights-out on this birthday beer bash.
*USA Today named Wild Leap the Best New Brewery of 2019!

Barely any flavor. It finishes really quickly. It’s mainly a generic licorice and slightly dark fruit base with some bakers chocolate, lactose, and sugar
Flavor got better as it warmed up. Great boozy aromas. Was a bit more carbonated than I prefer for a stout. Also had a hint of a metallic flavor that was unpleasant.
Rich and vanilla
Pretty tasty, not super sweet.
Was expecting more, couldn't taste much cake or ice cream.
Cake and cream flavor really come through if it isn’t cold. Light chill is way better
Thick dark and creamy. Perfect on a cold snowy day!
All I can taste is Chocolate and Coconut. Not bad, just disappointing.
This was good and got better as it warmed. More barrel aged rather than cakey. Good body and flavor
I taste the cake and ice cream and the bourbon barrel aging. Great treat/dessert beer. Happy 3rd birthday to Wild Leap!
Not as sweet as I wanted
Too sweet for me. Should have known by the description
Tasted like a barrel aged stout....worth drinking
Ooooooooooh.... creamy, smooth, and not an overly-bourbony brew. Like pouring melted ice cream into a killer stout. Great stuff! Good thing, as this was the one that lured me into this Tavour crate.
Birthday cake and ice cream and a beer sounds like a sweet, sticky mess. This isn't quite that but does have a fair amount of lactose sweetness and a booze that'll crack your front teeth if you're not careful
Really tasted the ice cream flavor!
Solid just as a vanilla stout but pretty mild on the cake flavor.
It’s a 5 star for me. It was nice creamy, smooth, sweet, not to rough, and easy to drink!
Oh man! Long story short. My brother In Law said SOY Sauce!! And guess what, that’s all I got. Very earthy umami, saltiness. Just like soy sauce. Discouraging. And specially since it was my birthday beer
Honestly average beer, didn’t get a lot of the adjuncts but would like to try again
A solid stout. Nice and hearty, full of that coffee flavor, and heavy like one would expect.
Very tasty and heavy. Wish I got 2.
Drinkable dessert. Yum!
Not as good as I thought it would be. Alcohol tastes too strong to where it’s hard to drink.
Lucious chocolate caramel cake with creamy vanilla ice cream
A little surprised at lackluster reviews on here. This is a top-notch barrel stout. You really get the ice cream flavors with the aftertaste. Subtle barrel tinge throughout, mild sweetness and creamy mouthfeel.
LOVE IT! Not too sweet, real rich.
Nothing besides sweet
Totally agree with the notion that the thick cake and ice cream flavors come out and get better as this brew warms.
Good, not quite great. Smooth but the sweetness didn’t have quite the right flavoring
not a lot of flavors. just a plain stout really. disappointed
