A Note on This Beer
Jester King is among the most influential U.S. breweries when it comes to Wild Ales. Their SPON beers are sought after by funk loving craft fiends from coast to coast, and now they’ve created a micro-batch run of just over 200 cases of Biere De Coupage, one of their most complex SPON blends to date.
This blend of 1 and 2-year-old, 100% spontaneously fermented ales captures the best elements of each beer to create something entirely new. A depth of funk and sour complexity permeates the brew, while the restrained acidity and rustic graininess of the Farmhouse Ale lends lively barnyard notes and tight carbonation. The brewers dry-hop with Czech Saaz for added herbal and floral aromas, punctuating each sip with satisfying dryness.
Funky Farmhouse fans go wild for Jester King beers. Today’s Biere De Coupage shows off the symphony of deep flavors Spon can unlock by, as the brewers’ say, “seeing what wild microorganisms outside our control do to beer over time.”
