Craft beer is full of innovation. New approaches, ingredients, and styles are constantly keeping us intrigued. However, very rarely does a staple ingredient like hops make us take notice. When we heard about Anchor Steam Brewing Company in San Francisco using a brand-new, not-yet-named hop in their latest release, we knew we had to jump at the opportunity to get some (a small initial batch was released in WA just last week!).
After sampling over a dozen experimental hop varieties, the folks at Anchor Steam were so struck by one variety in particular that they immediately knew they had found the inspiration for the fifth installment in their experimental and innovative line of brews known as the “Zymaster series.” Anchor was so excited by the hop they refused to wait until it was named!
Meet the newest hop on the block in Anchor Steam’s Zymaster No. 5 Harvest One American Pale Ale.
Breaking from the monotony of American Pale Ale bitter “C” hops—Cascade, Centennial, Columbus, and Chinook—Zymaster No. 5 puts this exciting new hop front and center, with just a touch of bitter Nugget-hop backbone.
The unnamed hop variety adds unmistakable notes of sweet peaches and melon that seem to float over a beautifully bitter lingering flavor. The medium-full body of this not-so-pale APA provides a wonderful stage for this bitter-sweet interaction to play out without overwhelming your taste buds.
But it is not just the experimental hops that make this brew intriguing. Anchor uses an extremely uncommon method of carbonation called “bunging” in order to produce their ales. Bunging, which involves closing the vent on the fermentation tank when fermentation is nearly complete, results in a livelier, champagne-like mouthfeel. In Zymaster No. 5, this produces a wonderful crispness that really highlights the hoppy aromas.
