Today’s Saison De Bois (Green Bottle) comes from the Saison-extraordinaires at Nashville, Tennessee's Yazoo Brewing.
The pay-off from finding a brewery this committed to the style comes with beers like today’s that took #4 out of 116 Saisons in Paste Mag’s blind tasting. It even beat out stellar beers from Hill Farmstead, Saison Dupont, and de Garde!
This limited brew is made in ultra small batches from a single puncheon cask. Then it’s naturally carbonated in Green Bottles with Candi sugar, sparkling white wine yeast and Brett. The result is a creamy nectar of juicy peach, tangy lemongrass, and sticky cantaloupe. The finish is deliciously dusted barnyard funk with a sweet watermelon candy aftertaste.
Green Bottle’s fruity refreshing profile will awaken palates of new fans and seasoned Saison fanatics. It’s worth the trip to Nashville just for a taste. And today you don’t even need to wade through a stuffy airport and hop on a plane to get one.
*Despite the name, this beer is in a brown bottle! (It was created for “Green Bottle Awareness Day” at the brewery taproom.) Rest assured it's the exact same beer from the same batch that Paste Magazine declared a Top 5 Global Saison.
