Perennial Ales and Solemn Oath Brewing redefine the scene by adding rich roasted malt and rye to their Stefon collaboration Farmhouse ale. Usually a dark beer reaches rarefied class through the amplification of alcohol, sweetness and char. Stefon instead expands its breadth, showing off cosmopolitan flair with rye, Brettanomyces and chocolate malt. Its complex palate merges the fruit of Belgian Saison yeast with the darkness of a Stout and the spicy pepper of rye.
Dressed in the sharp near-black of a trendy urbanite, Stefon catches the eye. Aromas of farmhouse apples pair deliciously with subtle woody char. Earthiness of Brettanomyces yeast couples with bittersweet cocoa. Rye spice injects a seam of savory spice through the heart, recalling whiskey. Stefon finishes dry and crisp like a bite of freshly toasted bread.
