If you spot one of Soquel’s Wild Ales, it’s like glimpsing a purple unicorn — they only brew 200 barrels of beer a year, and they don’t even have a tasting room yet!
Usually, to find one of Soquel’s hyper-limited brews, you’d have to scour California bottle shops, or join the brewery’s exclusive, members-only club.
But today, we’re bringing this Wild Ale magic right to you. In this fantastic tasting flight, you’ll get a chance to try 3 different barrel-aged brews from these California Craft Brewers Cup medalists, side by side!
First, Wild American Margot — a light and berry-loaded springtime sipper. The brewers jam-packed their spontaneously-fermented beer base with local, California-grown, tangy-sweet raspberries. Each sip reflects the beautiful, fertile terroir where it was made.
They also aged the brew in oak for 2 years! This adds layers of barrel complexity and a hint of wild yeast, barnyard funk for soft, crushable drinkability. Its scarlet pour even looks like a vibrant, Santa Cruz sunset.
Next, it’s time for a taste of Red #4 with Rye.
The brew’s one-of-a-kind character derives from Soquel aging the base beer in Tequila, Rum, Bourbon, and Rye barrels for two whole years.
It’s a bold move on Soquel’s part because, in lesser hands, this barrel blend might taste too muddled with competing spirit profiles. But, aged carefully by these specialists, every sip sings with a sumptuous harmony of agave, molasses, vanilla oak, and hints of slightly spicy-sweet rye notes.
Each sip is slightly funky and refreshing, and the spirit flavors keep you coming back for more complex tastes.
Finally, ward off the evening chill with a can of sultry Dark Wild #2.
For this beauty, Soquel aged their spontaneously fermented base beer for eight months in French oak barrels, then aged it for four more months with bright, zingy cara-cara oranges.
