With their Raspberry Sour Ale, Avery infuses decades of barrel-aging expertise with intimate knowledge of microflora and wild yeast. The exceptionally rated result is a fruit-forward Sour that fits perfectly in Avery’s award-winning catalogue.
This 6.5% ABV puckering elixir gets its rich sourness from two key microflora: Lactobacillus and Pediococcus. These two strains of bacteria are essential producers of lactic acid. Introducing lacto encourages a clean, sharp tang, while pedio boosts with an intense, earthy complexity typically found only in elegant foreign Sours.
Working in tandem, lacto and pedio are amplified by the fresh tart of red raspberries. A perfect compliment to the Sour journey, these berries elevate the nose and linger on into the juicy body. Brettanomyces introduces subtle flavors of red peaches, while oak from the barrels impart a delicate spicy woodiness to the finish.
