If you visit the The Good Beer’s Gatsby-esque taproom, lined with oak barrels and antique copper beams, you’ll see the head brewer walk by in rubber boots.
Salute her with a glass of zesty, earthen MF/BF Mosaic Mandarin Sour Ale in your hand. True to her signature emphasis on quality and balance, Robyn Spevacek only brewed 5 barrels. We bet her elbow got sore from zesting all those oranges...
Cheers to Robyn! She determined that piney hops, Mandarin oranges, and the brewery’s house mixed-culture strain could be aged and fermented in oak barrels. And she dubbed it quite literally: MF > mixed fermentation / BF > barrel fermented.
In this citrus MF/BF Sour, the dry woodiness of oak provides a base for pungent, tart cultures. Aging with Brett and Lacto mellows the sweet citrus flavor and adds a hint of tangy funk; it effortlessly melds with the soft stonefruit notes of Mosaic Hops. The final taste glows like a sprig of mint atop a cocktail.
