A Note on This Beer
Releases from Crux Fermentation Project’s barrel-aged [Banished] series always hit the craft scene with a lot of hype. When we heard they were releasing a new one, In the Pocket Imperial Saison, we got in on the ground floor to grab a stash before it all gets snapped up (which we know it will).
A barrel-aged Imperial Saison made with multiple strains of Brettanomyces, In the Pocket is a 9.9% ABV tart sipper of berry and lemon proportions. Bursts of complexity come from the blend of two Imperial Saisons – a younger one fermented with two strains of Brett, Lambicus and Bruxellensis, and an older version aged for 16 months in Northwest red wine barrels.
This combination of layers and yeast strains yield lemon juice aromas from a bright gold pour, tumbling into cherry pastry flavors from Brett Lambicus. Red wine barrels give the Brett strains a wild playground to develop tart fruit flavors. Saison yeast brings a touch of coriander, with spicy Bruxellensis funk and tannic grape skin from red wine barrels round out mildly bready notes. Dry oak earthiness and tangy orange peel linger in the finish.
Crux consistently reinterprets Belgian styles by taking them on a crazy journey for unseen levels of booziness and flavor – each sip of In the Pocket will take your palate on a thrill ride of imperial proportions.
