A Note on This Beer
When we asked Plan Bee’s headbrewer to pick his favorite creation, he didn’t hesitate: it’s today’s lemony crisp Huitlacoche Wild Ale. Why? It’s one of the upstate NY brewery’s most delicately nuanced brews, offering a true taste of their 24-acre farmhouse estate. When we asked, how much we could get, he reluctantly said “...I want to drink it all myself.”
Luckily we convinced him to part with a small stash of this elegantly tart masterpiece that features Plan Bee’s proprietary honey yeast and 100% New York sourced ingredients. In Huitlacoche, they tap into centuries of farmhouse tradition by brewing with 3 heirloom varieties of corn -- all grown right on their farm.
Huitlachoche leads off with aromatic floral notes of raw honey from the wild yeast captured from Plan Bee’s onsite bee hives. The use of a coolship captures additional wild character from the air, imparting a light lemony kiss of tartness that brightens the body. Bloody Butcher, Ohio Blue Clarage and Reid's Yellow Dent corn varieties impart the crisp cracker-like flavor similar to fresh made tortilla chips. Hints of white grapes from oak barrel aging emerge before it finishes extra dry.
Alongside Jester King and Jolly Pumpkin, New York’s Plan Bee is part of the elite Wild Ale community whose beers rarely leave their region. But those lucky enough to have tasted Huitlachoche are praising it on Untappd, rating it well over 4 on average -- they might just love it a bit more than the Plan Bee brewer does.
