The Brett and fruit forward Mosaic Hops combine to form a powerhouse of kumquats, pineapples, green tangerines, and guava. The tartness has a restrained vinous influence softened by the sweetness of the oak. What really shines here is the fruit as they shift from juicy to bitter to funky. The whole delicious cycle repeats itself until the sad moment when it’s all gone.
