Strange Roots builds layers of sophistication in Haviken by adding a touch of sour cherries from the renowned cherry-pie-like Brett Lambicus Wild yeast strain. Next it gains a splash of plummy, dark fruit depth from added wine lees. Finally the brewery powers up Haviken with Champagne yeast, accenting the dry vinous grape character and tickling the palate with a steady flow of micro-bubbles.
