By adding tons of Simcoe Hops in a dry-hopping process, Praire develops dense guava and passion fruit aromatics that pop with intense fruitiness and none of the typical hop bitterness. The fruit is further enhanced by a lacto culture and wine yeast. These work together to add the exotic citrus and wine-like tartness of calamansi limes, kumquats, and Sauvignon Blanc. Prairie then sets the stage for funk, seeding the beer with two types of Brettanomyces to provide a light tanginess like fresh goat's cheese that will develop gradually with cellaring.
