It's common knowledge you can't cellar an IPA. But Stone Brewing never was very shy about defying trends. Their newest IPA is a delicious challenge only the most patient and dedicated of craft beer drinkers are prepared to handle.
Stone’s Enjoy After Brett IPA, a creative spin on their beloved Enjoy By IPA Series, cannot be fully enjoyed until 10.31.16. Seriously.
With Enjoy After, Stone’s brewmaster Mitch Steele relished the opportunity to harness unpredictability and patience - what better way than with the wild, ever-evolving strains of Brettanomyces? Spiked with Brett just before corking, Enjoy After will slowly infuse the IPA base with charming complexity - peppercorns, farmhouse funk, and juicy lemon acidity.
Brett’s delicious potency demands patience and the following Three Key Cellaring Tips:
Keep it out of the fridge - Store Enjoy After in a temperature between 50° and 70°F. Too cold, and Brettanomyces won’t develop. Too hot and you’ll get off flavors.
Keep it in the dark - In direct sunlight or even in a bright room, the hop flavor will shift into skunky territory.
Wait One Year to Open! Stone beckons you to wait till 2016 to capitalize on all the flavor potential.
You may wonder, what does Enjoy After taste like? We have no idea. Just like you, we’ll have to wait a whole year to see what flavors emerge. But last year’s Enjoy After is getting incredible community praise - RateBeer gave it a 97 and it hasn’t even reached Stone’s recommended date.
If staring at Enjoy After induces a hysterical itch to open prematurely, fear not. Open on Halloween at the earliest to get a sneak peek at future glory. But we recommend snagging a second bottle - you never know what adventure awaits you in the cellar. You’ll just have to hurry up and wait.
