A Note on This Beer
Aged on smashed Cabernet Sauvignon grapes from a local Colorado winery, Trve Brewing Co.’s Ecate is a sparkling display of juicy wine-like tannins amplified by a Golden Sour Ale base featuring a mixed Sour culture.
Trve’s use of red grape pomace – the whole pressed grape, with seeds, skins, stems, and juice – brings nuanced tannic flavors that only come from brewing with actual grapes. Aged to just the right balance of tart and smooth, Ecate is a clear display of the discipline needed to craft innovative flavors in a Sour Ale.
Aromas of tart cherry and fresh lemon peel float from a rose-tinted pour. Notes of strawberries and huckleberries mingle with the lacto-infused Golden Ale base, providing a soft yet jammy mouthfeel with a sour punch. Dark red fruit from wine grapes bring luxurious juiciness before tumbling into a dry tannic finish.
Trve has the reputation of being Denver’s “True Heavy Metal Brewery,” but Ecate shows the softer side of their mixed culture fermentation expertise. For their last release of Ecate at the Trve taproom, they limited it to four bottles per person, but don’t worry – we’ll let you grab more than that from our stash.
