Pouring so dark the brewery warns it “will stain your clothes,” this roasty potion of coffee-soaked ganache melds a flurry of malts so revered, it’s the basis for one of the Northwest’s most hallowed craft events: The Festival of the Dark Arts. Cavatica’s pitch black, spiderweb-printed can eludes to the 8.8% ABV toasted marshmallow venom inside.
Named from the Latin root for “abyss” or “dark place,” Cavatica backs up its reputation with a thick, midnight-shaded pour lifted with a latté-like khaki head. Blackstrap molasses temps the nose alongside a swell of English tobacco and baker’s cocoa. Assertive Turkish coffee bitterness spikes, followed by a quick, creamy reprieve of Godiva-like liqueur, and black cherries.
Strong but curiously easy drinking, Cavatica is an Imperial Stout that pairs well with every season, but let’s be honest, there’s no better time to drink a dark beer than right now.
