A Note on This Beer
When the Hughes Brothers opened ColdFire Brewery three years ago, they immediately sourced SIX Bourbon Whiskey barrels to age their Imperial Stout. In those few years, ColdFire earned their first GABF medal and devoted locals at their Eugene, OR taproom. Now everyone is clamoring to get a taste of their special release two years in the making: The Bourbon Council is out-- and it’s a 10.5% ABV doozy!
Not only did the brewery limit it’s bottle run to 100, but they also restricted local purchases to one bottle-per-person. Knowing how obsessed Tavour is with finding high-quality barrel-aged beers, they’ve given us half of their stash! Like their locals, we wish we could taste even more of its roasted toffee flavors.
The Bourbon Council is a blend Stouts aged for up to 2 years in Bourbon barrels from such Kentucky notables as Woodford, Heaven Hill, and Old Forester. The Bourbon Council is ink-black and mildly warm, evocative of two years aging in cellars. The original Imperial Stout flavors of sugary praline and and salted caramel are softened by effervescent oak barrel notes. “I could live on this,” says @kundala.8 on Instagram. At such limited amounts, poor “kundala” wouldn’t last long. Alas, one night of dark delight will have to suffice.
Us Tavourians nerd out about barrel-aged beer for a reason: the intricacies of the ingredients, aging, and type of whiskey barrels make this style ripe for micro-batch perfecting. A good brew can make a hyper-local brewery shine. We foresee the same from Bourbon Council, our introduction to ColdFire! Brrr-- it’s getting warm in here…
