A Note on This Beer
Beers like Blue Canyon have earned Structures Brewing a 4.05 brewery rating on UT, and their tiny taproom has gone from a local secret to a packed craft beer phenomenon — it gets hit with thirsty fans from Canada, from Seattle, and now that word is spreading, it’s picking up a stream of fans from California and Oregon.
So if history is any indication, today’s barrel aged fruity treasure will sell out at the brewery while locals and beer tourists alike are still waiting in line.
One taste of Blue Canyon Blueberry Saison demonstrates why these guys have gotten so popular so quickly. Mild acidity allows 3 lbs per barrel of fresh, locally grown blueberries to shine through, adding tannins and a light sweetness. Aging in Pinot Noir barrels creates mild oaky flavors and jammy complexity, and bottle conditioning with Brett imparts subtle funky notes and leaves a dry finish.
On release days, hordes of Seattle craft fiends make the drive almost 100 miles north, lines stretch around the block, and townies go thirsty because they can’t get so much as a sip of any new offering from their brewery.
At just three years old, Structures has already become a regional favorite, with craft heads on the Beer Tasting Seattle forum offering to trade highly-coveted beers from powerhouses like Anchorage and Holy Mountain, just for a taste. Claim your Blue Canyon while you can!
