Each release of Cismontane Brewing’s “Black” Series takes their highly rated Black’s Dawn Imperial Stout into unchartered barrel territory.
Black’s Twilight could be the most unique yet. This bourbon barrel aged Sour Imperial Stout goes heavy on the bourbon, heavy on the bourbon and a tad heavy on the bourbon. With just an edge of tartness similar to tangy dark chocolate and a barista-grade deliverance of rich coffee grounds, Black’s Twilight epitomizes the type of eye opening, genre-bending beer we search high and low for.
A complex breadth of roasted Stout flavors rises out of the textured Black Dawn base (brown sugar, coffee, oats.) The brewery’s ingenious integration of two wild strains (Lactobaccillus and Pediococcus) introduces dark beer fans to a novel dimension of flavor: dark fruit, coffee, molasses and rugged chocolate become imprinted with a distinct sour bite that’s both luxurious and refreshingly new. This silky, dark ride is then spun into deep wells of bourbon that saturate the palate with a spicy, woody finish.
Hunting down exclusive, revolutionary beers can be a boozy adventure all its own. Sometimes we come home empty handed when beers don’t live up to the hype. But sometimes we come home victorious. Black’s Twilight is an 11% ABV bourbon coated victory.
